What Makes a Good Taco

This is serious business, and I will fight anyone who disagrees.
1) The Tortilla
This is the bed where the magic happens. You don't want it to break halfway through, and you definitely don't want one so sturdy that it stops you from experimenting. You want the kind of tortilla that is just as soft as it is strong. And no, doubling down is not an option. Doing that is satanic and I will not allow for such mediocrity.
2) Meat to Tortilla Ratio
Again, the tortilla is just the set, not the experience. When you fold up that little bundle of joy it shouldn't fall apart, but rather, it should bind up in a perfect bite. One where the meat is the star... Cue the Magic Mike scene.
3) ACHIOTE
I am salivating. Do you ever drive by a taqueria and look at that big trompo de pastor and just think "god damn you are seasoned just right"? It's something that's just instinctive. You don't doubt whether it's been prepared well, you know it has because the love just bleeds off of it. Salute to our Pastoreros. I love you. You are the backbone of this nation and of my life. Te amoooooooooo.
4) Size Matters
Tizoncito, I'm out for you and your itty-bitty tacos. Who are you trying to fool here?! I would give you a pass on it if your tortillas actually held up, but even they need an extra shot of Viagra, Jesus Christ. I'm paying for you to satisfy me, not for you to be featured on my long list of disappointments. Step it up fools. Make tacos for life sized human beings. Or at least for short girls with issues.
5) Fruit and Veggies
To make it healthy. Duh. We donβt do tacos without the cilantro, onion and pineapple trifecta.
